Засолка сала

Ну хто не любить засолене сало, особливо з м’ясними прожилками ? Вприкуску з часничком, з помідорчиком і чорним хлібом? Запас солоного сала в холодильнику повинен бути завжди! Це і перекус на швидку руку, і бутерброд…

Інгредієнти

Сире свиняче сало (почеревина, корейка, грудинка)
Сіль
Чорний перець
Червоний гострий перець (НЕ паприка)

Приготування
Купуємо свинину для засолу. Сало бажано не мочити, а просто добре пошкребти ножем з усіх боків і шкурку в тому числі. Якщо є ребра, то їх потрібно акуратно вирізати.
Нарізати сало на зручні шматки, довжиною приблизно 8-10 сантиметрів.
Насипати в тарілку кам’яну сіль і ретельно обтерти шматки сала з усіх боків. Солі не шкодувати!
Всі шматочки сала загорнути в пакети по кілька штук, скласти в зручну посудину і залишити для просолу на 3 дні. У мене миска стояла на балконі. Якщо на вулиці дуже жарко, то знайдіть місце в холодильнику.
Через добу дістати пакети і злити рідину, яку сіль витягнула з сала.
Всі шматочки сала загорнути в пакети по кілька штук, скласти в зручну посудину і залишити на просолці на 2, а краще на 3 дні
Після закінчення часу сало витягти з пакетів і добре помити під прохолодною проточною водою.
Обсушити паперовими рушниками кожен шматочок.

Тепер кожен шматочок обсиплемо чорним і червоним перцем. Можна зробити мікс спецій, взяти, наприклад, перець, паприку, сухий часник, лавровий лист і ін. Це за смаком.

Солоне сало готове! Залишається тільки розкласти його по пакетам і відправити на зберігання в морозилку.
Коли захочеться смачного сальця, дістаємо шматочок, дамо полежати і відійти від заморозки хвилин 10. Нарізаємо тоненькими скибочками і подаємо на стіл.
